Pumpkin, Vege & Chicken Slice

INGREDIENTS

Pair with a leafy green garden salad and fresh herbs

 STEPS

  1. Preheat oven to 180 degrees celsius
  2. Use ½ the olive oil to grease a baking dish
  3. Line a baking tray with baking paper
  4. Add diced pumpkin to baking tray and cook for approx. 20 to 35min (until just cooked and slightly tender)
  5. Whilst pumpkin is baking add the remaining olive oil to a medium heat frying pan
  6. Cook the diced chicken until cooked through and lightly golden
  7. Whisk eggs and egg whites in a large mixing bowl
  8. Add all cooked and remaining ingredients to the bowl and gently combine
  9. Pour mix into the baking dish, gently smoothing the top
  10. Bake for 25 to 40 minutes, or until firm to touch
